Sydney diners are set to experience a unique culinary fusion as Morena restaurant collaborates with Tipo 00 for a special event celebrating the intertwined flavors of Italy and Argentina. The collaboration, part of the Dine Out Sydney festival, promises a menu that bridges the culinary traditions of both nations.
The event, titled “Morena x Tipo 00: From Italy to Argentina,” will feature a menu designed to highlight the shared heritage and distinct characteristics of Italian and Argentine cuisine. Chef Pablo Saravia of Morena and chef Andreas Papadakis of Tipo 00 are joining forces for this gastronomic exploration.
Guests can anticipate dishes that reflect this dual influence. Early offerings include grilled capsicums, presented as an ideal accompaniment to house-made focaccia. This dish evokes personal memories for Saravia, reminding him of the small grilled vegetable side dishes served at his Italian grandmother’s table.
pasta, a cornerstone of Italian dining, will be a prominent feature. Tipo 00’s renowned handmade spaghetti, prepared with Moreton Bay bug, tomato butter, and lovage, will be showcased.This will be paired with milanesa, a breaded veal cutlet that, while originating in Italy, has become a significant part of Argentine culinary identity. The milanesa at this event will be served with a “chimichurri gremolata,” a creative blend of herb-focused condiments from both cultures.
Saravia emphasizes the natural synergy between the two cuisines, noting, “The Argentine diet revolves around beef and barbeque. Celebrations of big ingredients like that work really well with Italian traditions of pasta.”
Sweet offerings will include Tipo’s signature Tipomisu and a novel interpretation of chocolate alfajores. These argentine shortbread biscuits, which have variations found in Spain and across South America, will be served with dulce de leche semifreddo and fermented berries.
Chef Papadakis plans to be actively involved during the event, stating his preference for interacting with guests when acting as a guest chef. He will be cooking and serving food directly to attendees.
The dining experience will be complemented by a curated selection of European and Latin American wines, alongside cocktails crafted with Italian and Argentine ingredients designed to enhance the meal’s flavors.
