Four Seasons hotel Jakarta welcomes Riccardo Pellino as the new Chef de cuisine at it’s celebrated rooftop Italian restaurant, Alto Restaurant & Bar. chef Pellino arrives wiht an remarkable background honed in both traditional and Michelin-starred kitchens across Italy, England, and France, most recently from a luxury hotel in Taipei.
Chef Pellino intends to build upon Alto’s existing reputation, focusing on a dining experience characterized by warmth, generosity, and authentic Italian flavors. Guests can anticipate a refreshed menu in the coming months, emphasizing classic Italian recipes and high-quality ingredients designed to create both flavorful and satisfying dishes.
Born in Meolo, near Venice, Chef Pellino’s culinary journey began in his family’s kitchen, learning traditional techniques from his mother and grandmother.He formally trained at culinary school and launched his professional career with an internship at a London five-star hotel, where he worked alongside Michelin-starred chefs. This experience fueled his ambition towards haute cuisine, leading him to France to study classical French cooking.
He quickly rose through the ranks, becoming Chef de Partie at Georges Blanc, a 3 Michelin-starred restaurant, within two years. Further experience included mastering molecular gastronomy at Zanze XVI in Venice, opening a seasonal restaurant in Megeve, and managing an Italian bistro on Mazzorbo Island. Prior to joining Four Seasons Hotel Jakarta, he served as Sous Chef in Taipei, leading a team of 18 chefs.
