The Michelin Guide unveiled the stars of its 2022 edition on Tuesday. In the country, the guide devotes 627 restaurants, including 41 new stars. “We want to particularly highlight the territories, the terroirs, the craftsmen and the local know-how… which contribute to the influence of our gastronomy” said Gwendal Poullennec, the international director of the Red Guide.

Two establishments win a 3rd star : Chef Arnaud Donckele for his restaurant Cheval Blanc Plénitude in Paris and Villa Madie in Cassis (Bouches-du-Rhône) also won a 3rd macaron. In Burgundy-Franche-Comté, the only three-star restaurant remains the Maison Lameloise, in Chagny, in Saône-et-Loire.

In France, there are six new two-star restaurants, but no newcomer in Bourgogne-Franche-Comté. Our region still retains five two-star restaurants. Two restaurants earn their first star in our region : the restaurant Hostellerie Cèdre & Spa, in Beaune (Côte-d’Or) and the Origin restaurant in Dijon (Côte-d’Or).

Note that for the entire Bourgogne-Franche-Comté region, no restaurant has lost a star this year.

Green stars, more environmentally friendly gastronomy
