From Antibes to Menton (Alpes-Maritimes), there are only about ten fishing for poutine. A highly regulated fishery, authorized 45 days a year to preserve the resource. “It’s cultural, it’s a tradition now, because before, there were maybe 30 or 40 boats fishing for poutine, and all day long,” says one of the fishermen.
