On a farm not far from the city where protests broke out in July, the police carried out a major secret operation last year. The target was not a political activist, but a dairyman. He was called El Rey del Queso: The Cheese King.

What had he done? Run a secret dairy. He produced large wheels with cheese for sale on the private market in Havana.
