Not only these, but also many other words and concepts forgotten in our kitchen can be read in 414 recipes in the 225-year-old cookbook “The first cookbook, translated from German books”. It was once published in Rubene rectory and is the first cookbook in Latvian. Now it has been reissued and can provide ideas for interesting recipes as well as insight into history.

“I call him the Bible in the kitchen,” says Sanita Millere, the restaurant manager at Rundāle Castle, at the reopening of the first cookbook written in Latvian. She has been researching ancient recipes for 27 years and, of course, got to know and tried the ones in this book.

“It is such a revelation, getting into history, and now a very big event in the culinary world. In the new spelling format, we can delight other professionals with these secrets that were in this only cookbook. Other flavors, other complex cooking methods,

they are completely different technologies, different forgotten tastes, different products and combinations of different products. Even the ones we are not used to eating, ”said Miller.

The initiator of the new edition of the book is Kocēni County Council, which gained support in the competition of cultural programs of Vidzeme planning region. This has not been an easy task – to pass on the 225-year-old book to today’s readers, because it contains many ancient words, concepts that we no longer use or even use in another sense.

Therefore, in order to make it easier for today’s chefs or simply interested people to understand the words in the book, they now also have an explanation. “This book preserves both the form of expression and the language of the time, and the nicest thing, which I think is in this book, is that in the last pages we can read a translation of various words that may be incomprehensible to us. For example, a mash is a cake, something made of mash. Anchovies – Today we all know anchovies, but in the book they are sardines. Stain or marinate in a marinade or marinate. But in cooking, yes, there are many very interesting things we can borrow, and these recipes are also interesting as a read, ”said Nagle.

This first cookbook is important in some ways – it is the contribution of the German pastor Christoph Harder. While serving in the Rubene parish, he also wants to educate Latvian farmers. Of course, in writing this cookbook, Harder has a purpose.

“It is intended for those Latvians who worked in manors as helpers in kitchens, so that they know when to put the boiler on the stove and what can be placed there. But I would say that it also had a great educational value – a lot of words that we don’t even know, he has made and brought in our language, of course, thus broadening the horizons of the people who lived here, ”said Artis, the current pastor of Rubene parish. Pastor Harders set up a printing house in his rectory and published several books in Latvian, including the first reckoning book for farmers.

According to Andris Vilks, Director of the National Library of Latvia, Harder’s contribution was very important at that time:

“A large part of Latvian farmers were still natives, and he believed that the Latvian people should be educated,

that Latvians must learn not only to read what was before, but also to write and count. He also encouraged me to think economically, because, for example, the spreadsheet had a very practical purpose, so that the farmer could count money, so that he could orient himself in goods and help to make Latvian life better. ”

Pastor Harders of Rubene also published Vidzeme calendars, in which Latvian personal names suggested to farmers, such as Gudriņš, Brīvuls or Pašvaldis and others, are quite interesting from today’s point of view.

“It would be possible to give names to children born now, not Valdus, but to the Municipalities, and when they grow up, maybe they will become good municipal leaders,” laughs Wolf. ” But those words didn’t come in, they were very artificial and complicated. But one word has been and is very popular for several generations, and that is Clear. And it was created by Christoph Harder, the pastor of Rubene, at the end of the 18th century. ”

The first cookbook in Latvian, which has now experienced a new edition, may be interesting for both professional chefs and eating enthusiasts, as it includes 414 recipes. It can also be interesting with its language, ancient words and, of course, to learn what was then brought to the table in manors more than 200 years ago.
