Tonkatsu King: University Dropout Builds Thriving Stall Chain,Eyes Expansion
SINGAPORE – A former university dropout has built a successful tonkatsu stall chain in Singapore,with plans for further expansion into mall food courts and potential franchising opportunities. Mr.Wijaya, who arrived in Singapore 18 years ago, now operates multiple outlets and motivates his staff with performance-based incentives, potentially reaching up to $1,000 a month when stalls are profitable.
Mr. wijaya’s journey to Singaporean entrepreneurship began after leaving university. He received Singapore citizenship in August 2025, following four previous unsuccessful attempts. His wife, a nail services instructor, and their four children – a 21-year-old son born in Japan, and daughters aged 19, 16, and 14 – are settled in Singapore. His wife and son are permanent residents, while his three daughters are citizens. “I’ve been in Singapore for 18 years, longer than in Indonesia. My mother and brother are here too. This is home,” he said.
While the coffee-shop market presents challenges – with increased competition from air-conditioned food courts and high rental costs - Mr.wijaya is optimistic about the future. He introduced a Special Pork Katsu Don to the menu in August.
Looking ahead, he plans to open two new outlets in mall food courts in 2026 and is exploring both local and international franchising options. “I want more exposure for my brand and I want to make it bigger, but in a cautious way. I see potential in fast-casual concepts. People won’t go for fine dining every day, but they will often return for affordable fare,” he explained.
Having learned from a previous expansion during the pandemic, Mr. Wijaya emphasizes a careful approach. “During the pandemic, we expanded too fast. This time, we will do it carefully.Quality must always come first.”
