Ratz Foodhall to Immerse Diners in Middle Eastern and Asian Flavors

A new foodhall, named Ratz, is set to open, offering a culinary journey through the Middle East and Asia. The establishment will feature ten permanent food stands, divided equally between the two regions, complemented by two caravans and a food truck on the ground floor.

Co-founder Thierry Goor described the Ratz concept as an evolution from their previous ventures,Wolf and Fox,aiming for an even more immersive decorative experience. “Every restaurant gets a decor that fits its region,” Goor told the business newspaper Litter, emphasizing the creation of an immersive atmosphere.

The name Ratz, while possibly surprising, holds symbolic meaning. “In Asia, the rat symbolizes wisdom, intelligence and happiness,” Goor explained.”We want to show that you can also view things differently.”

Beyond the culinary offerings, the second floor will provide 1,000 square meters dedicated to exhibitions and events. The project’s funding is a mix of private investment and a bank loan, with the site secured on a 27-year lease. The initiative is expected to generate approximately one hundred jobs.

Renowned Chef, Novel Concepts

Georges Gorgeous Sar Sar, the founder of the My Tannour chain, will spearhead the five Middle Eastern kitchens. However, his established brand will not be present at Ratz. “My Tannour is enough in Brussels,” Sar Sar stated. “I am developing new concepts for Ratz. The Middle Eastern cuisine is so rich, there is still much to discover.”

The selection process for the remaining chefs is ongoing, with significant interest from various culinary professionals, including a Michelin-starred chef. Goor highlighted the low risk for participating restaurateurs, as ratz manages the design and decoration. Online presence is also a factor in chef selection. “We choose the chef with the largest reach between two equal candidates,” Goor noted,citing one participant with nearly 900,000 Instagram followers.

Goor attributes the success of their food markets to a combination of prime locations, distinctive design, and careful curation. Similar to Wolf and Fox, Ratz will operate on a revenue-sharing model with restaurant owners, including a percentage of drink sales. “As with Wolf, we also provide our own beer here,” Goor added.

The Ratz foodhall represents a growing trend in urban dining, focusing on curated culinary experiences that blend authentic regional flavors with immersive environments. The strategic use of social media reach in selecting vendors reflects the evolving landscape of the food industry,where online visibility plays a crucial role in customer engagement and business success.
