Nutrition: fact check: fat and dumb from wheat flour? – Messages

The expert points out a general problem with nutritional studies: when evaluating people’s eating habits, it is virtually impossible to look at a component such as wheat flour in isolation. Therefore, its concrete effect on health can hardly be measured individually.

However, it is plausible that people who eat a lot of highly processed wheat flour have a higher risk of being overweight, according to Kabisch. The hormone insulin plays a role in this. Among other things, it is responsible for transporting glucose (grape sugar) from the blood into the cells.

For example, eating white wheat flour toast, which is high in simple starches, causes blood sugar and insulin levels to rise and fall quickly. If that’s the case, you’ll soon get hungry again. Then you are more likely to eat again than someone who has eaten a whole grain product with more fiber and who has blood sugar and insulin levels rising and falling more slowly.

In addition, there is a primarily statistical connection between the frequent consumption of products made from heavily processed wheat flour and unhealthy (eating) habits in general, explains Kabisch. “People who eat a lot of wheat flour usually also consume too much sugar, eat fewer vegetables and smoke more often.”

According to the doctor, there is no evidence that wheat flour makes you stupid. “To understand influences on the intellect, one would need a large, well-designed, controlled study that examines the development over a long period of time.”
