Tokyo FM’s “KINKATSU TREND ONE” Spotlights Mushroom risotto for Seasonal Wellness
TOKYO – As the first and second weeks of September mark a key transition between seasons, Tokyo FM’s “KINKATSU TREND ONE” is focusing on combating seasonal fatigue with a nutrient-rich recipe featuring mushrooms. The program, hosted by Yuji and Yoshida Akiyo, highlighted the importance of supporting the body’s natural defenses as autumn approaches, especially for those experiencing appetite changes or weight concerns.
The segment featured Dr. Toshiyuki Matsuoka of Esaka Matsuoka Eye Clinic, who emphasized the benefits of dietary fiber, beta-glucan, and GABA for maintaining well-being. These nutrients, all found abundantly in mushrooms, contribute to a stronger immune system, stress relief, and improved sleep quality. To showcase how to easily incorporate these benefits into daily life, registered dietitian and food coordinator Kitajima Kana developed a simple “Bunashimeji and Bunnapi Cheese Risotto” recipe.
“Bunashimeji and Bunnapi Cheese Risotto” Recipe (Serves 1)
Ingredients:
Bunashimeji mushrooms: 1/4 bag
Bunnapi mushrooms: 1/4 bag
Sausages: 2 links
cooked rice: Approximately 120g
Milk: 100ml
Pizza cheese: 20g
Salt: to taste
Coarse black pepper: To taste
Instructions:
- Remove the base of the bunashimeji and bunnapi mushrooms and gently loosen them.Slice the sausages into 5mm widths.
- Combine rice,mushrooms,sausages,and milk in a heat-resistant container. Cover with plastic wrap and microwave at 600W for 4 minutes.
- Mix well, transfer to a bowl, and sprinkle with coarse black pepper.
