Endives au gratin with ham from Laurent Mariotte

Every Saturday, the team of La table des bons vivants offers seasonal recipes to make at home to feast with family, or with your friends. Today, Laurent Mariotte invites you to reproduce the favorite dish of singer Nicoletta: endives au gratin with ham.

Ingredients for 4 persons) :

  • 4 beautiful endives
  • 4 slices of white ham
  • 200 g grated Gruyere
  • 50 g butter
  • 1 pinch of powdered sugar
  • 25 cl of chicken broth
  • Cell
  • Pepper

Production :

1. Slice the endives lengthwise. Melt the butter in a sauté pan. Add the endives, sliced ​​side down. Leave to brown for 1 minute, add the sugar, cover with broth. Salt and pepper lightly. Leave to cook for 10 minutes, uncovered.

2. Once the endives are cooked, drain them and reserve the broth. Roll them in the ham, place them on a baking sheet covered with baking paper. Melt the Gruyere in the broth and let it thicken. Cover the endives and brown them for 5 minutes under the oven grill. Serve hot, accompanied by a green salad.
