Drought in Cantal: the production of Salers AOP cheeses suspended

The production of AOP Salers cheese will be temporarily suspended from Friday August 12, 2022. “There is not enough grass anymore”, regret the dairy farmers of Cantal, quoted by The mountain . Unable to feed their animals properly, the producers preferred to stop their production.

Auvergne is particularly affected by episodes of heatwave this summer and by the drought who accompanies them. So much so that the cheese itself could be threatened. “With these years of repeated drought, it becomes complicated”, assures the president of the Salers AOP section of the Interprofessional Cheese Committee Laurent Lours, quoted by BFM TV .

“Respect the consumer”

In Switzerland, it is the producers of Gruyère AOP who are worried about a low milk production in the future. “Upstairs, it’s like our cows are walking on crisps,” testifies a farmer to the newspaper Time . “The land is charred. We are obliged to compensate for what is missing by bringing up hay and water. It’s a lot of work for little reward,” regret another breeder.

Although painful for Cantal breeders, the decision to temporarily suspend the production of AOP salers cheese also aims to “respect the consumer”, underlines the president of the AOP, since grazing to satiety is part of the specifications to claim the name of this cheese.
