This story begins in 1920. Today it is the 7th generation that takes the torch.

After the war, it was Léon Loumagne who, after numerous culinary experiences in various countries and regions of France, took charge of the hotel-restaurant on the Place de la République in Carbonne. When her daughter, Danielle died, managed “L’auberge Carbona”. At the end of 2020, she takes a well-deserved retirement.

After a few months of embellishment work, it is his son, Florian Taufine, who opens “L’ardoise gourmande”. We met him.

Florian, what is your background?

After a CAP, then a BTS at the hotel school in Mazamet, I returned to working life.

I made my debut in this same city at the restaurant “Le grand balcon”.

My second employer was Mr. Chelot in Saint-Sulpice-la-Pointe. I then spent some time as a bartender at the “Capitoul” in Toulouse.

I have been practicing my profession in Carbonne for 14 years now in my mother’s restaurant.

Are you opening your business in the midst of a pandemic?

Yes, I took advantage of this end of 2020 and the confinements to completely redo the interior of the establishment.
