Bella Sorella Pizza to Launch Clayton Restaurant After Years of Mobile Success
Clayton, OH – Beloved local pizzeria Bella Sorella is set to open a 3,500-square-foot restaurant on U.S.40, addressing a noted need for dining options in the area. The new location, situated between Esther Price and the Kleptz YMCA, marks a significant milestone for the sisters behind the brand, Elizabeth Corrado Weizman and Gail Corrado Okafor.
From Food Truck to Brick-and-Mortar
Bella Sorella began in 2013 as the region’s first wood-fired pizza food truck. Over the years, the business expanded into a full-service catering company, serving events throughout the Dayton area. “There’s not a lot of places to eat on this side of town. There’s plenty of people, but there isn’t a whole lot of choices,” explained Elizabeth Corrado Weizman. The sisters collaborated with Ferguson Construction on the build-out of the new restaurant.
The restaurant will offer a casual, family-amiable atmosphere with seating for approximately 80 patrons – 50 indoors and 30 on a planned patio. A full bar program is also in growth, complementing the menu of pizzas, salads, sides, and desserts.
A Taste of Italy in Ohio
Weizman emphasized the importance of honoring her Italian heritage in the restaurant’s concept. “It’s a privilege and honor in Italy to work at a restaurant,” she said. “we want to try to lean on that a little bit. We want it to be as Italian as we can make it because that’s really who we are.” This commitment extends to sourcing fresh, local ingredients, with Weizman cultivating many of the herbs and vegetables used on the pizzas at her own farm.
Did You Know? The concept of farm-to-table dining, like Bella Sorella’s approach, has seen a surge in popularity, with consumers increasingly valuing locally sourced and sustainable food options USDA.
The Perfect Dough: A Mobile Challenge
Developing the signature Bella Sorella pizza dough proved to be a key challenge when the business was initially mobile. “Pizza was something we kind of had to figure out on our own,” Weizman admitted. After years of refinement, the current recipe utilizes just four ingredients and delivers a uniquely satisfying texture. “Our crust is the perfect texture as it’s chewy and it’s crunchy simultaneously occurring,” Weizman stated. “It’s always well baked with the char and everything, but it’s also our ability to use the freshest of everything.”
Overcoming Obstacles: A Story of Resilience
the journey to a brick-and-mortar location wasn’t without its hurdles. Weizman shared that plans had been stalled previously due to personal health challenges. In 2020, she received a diagnosis of multiple myeloma, a cancer affecting the bones, and underwent two stem cell transplants and five years of chemotherapy. “It kind of all worked out at the right time because I’m doing so much better now,” she said.
