Anglet: the delights of Brindos | Gilles Pudlowski’s blog

We told you about Brindos Lac & Château, which has once again become, with the Millésime group, a flagship of Basque tourism, with its private lake, its 1930s hacienda look, its brand new floating lodges, again affiliated with Relais & Châteaux. The kitchen, supervised by Flora Mikula, advisor to the group, is executed by resident chef Hugo de la Barrière, formerly of the Ibarboure brothers in Bidart and Castel Clara in Belle-Île-en-Mer. It plays on seasonal dishes, products chosen from good sources, the flavors of the Great West, with a refined and rural setting and a service at the petit point.

On the program, fine, fresh, light, well-seen things. As these a“tapas tree” style muse with four kinds of hummus, Banka trout tarama with piperade confit, squid with chorizo ​​and Espelette pepper, minced sea bass with watercress and morels with Aquitaine caviar, half-cooked tuna from Saint Jean de Luz and tomato tartare, shellfish au gratin with candied lemon and grilled almonds or even txanguro (including spider crab) au gratin in bisque with smoked pimenton.

Line-caught sea bass in virgin oil, from the Millésime selection, with its sunny vegetables (tomatoes, peppers, zucchini, aubergines), which allows the service to be a great demonstration exercise in the dining room at the pedestal table. We add the beautiful Iraty lamb with hay with its small ribs that we suck like candy. We add local wines, such as the lively and fresh white Irouléguy, plus the red with a pretty nose of pepper from Olivier Pouchoulou’s new Xut estate.

We add the desserts of a young pastry chef familiar with his subject, Corentin Poirier-Martinet: passion fruit and coconut, baba de Brindos with the brandy of your choice, more vanilla whipped cream and macerated grapes, leaving it to the service to finish the job brilliantly, without forgetting the Russian praline with fleur de sel from Béarn and the green Izarra, just to remember that we are indeed here in the Basque country. Long live Brindos found!
